History of the bottle
How it was born
Essenziale comes from an idea and a challenge: quality white wine from a vine with a reputation that is hardly comparable to quality. The small production of white wine in Orzale takes the grapes that in the past were destined to enrich the Chianti blend with acidity, but after a few years we realized that we could expect more from our Trebbiano grapes.
Harvest period
The grapes of this vine are harvested by hand in the first half of September just before the red grapes are harvested.
Vinification
The hand-picked Trebbiano grapes are processed with various techniques that then enhance the final result. First of all a light maceration on the skins for about 24/48 hours, which gives the wine a more amber color than traditional vinification, but which enhances its flavors and smells. During and after fermentation we leave the wine in contact with its lees which enrich its smell and make it softer on the palate.

The refinement takes place initially in steel tanks and subsequently in the bottle.

Tasting Notes
It has an intense yellow with amber reflections with an acidity that gives freshness and highly marked and unmistakable flavors. Its acidity gives freshness and the flavours notes that comes from the maceration exalt the floral bouquet.
Pairing
First and second dishes based on fish, excellent as a fresh summer appetizers.
